  
Friselle are a classic snack from the Puglia region of Italy.
They are typically prepared by soaking them in water for a couple of seconds (or passed through running cold water for two or three seconds), adding fresh cherry tomatoes, a drizzle of olive oil, a touch of salt, pepper and oregano.
Real Friselle are not made from "day old bread". Friselle's dough has to rise twice at two different temperatures and baked twice (after they come out of the oven the first time, the bagel-shaped friselle are cut in half and baked a second time).
